Bariatric Vitamins and Supplements

How many times have you stood in front of the refrigerator or pantry and wondered what you should eat? You may have become tired of the same old thing and are looking for some new and delicious gastric bypass recipes.  Adding new recipes to your repertoire may be just the thing to keep you on track with your bariatric diet.

These tilapia tacos are a delicious variation to the traditional tacos you may have had on your pre bariatric surgery diet. Tilapia is a fresh water fish that is tender, delicious, and nutritious. You can substitute other types of fish; but try to make it a firm white fish.

Taco Ingredients

  • 1/3 cup low fat sour cream
  • 1 jalapeno pepper, seeded
  • 2 Tablespoons fresh lime juice
  • 1 cup chopped cilantro
  • 2 Tablespoons canola oil
  • 1 1/2 pounds tilapia, sliced into 1 inch strips
  • 8 – 6″ soft flour tortillas, warmed
  • 1 avocado, peeled and cut into chunks
  • 1 large tomato, chopped
  • 1/4 red onion, thinly sliced
  • 2 cups finely shredded lettuce

Preparation

  1. In a food processor or blender, puree the sour cream, jalapeno, lime juice, and cilantro. Set aside.
  2. Heat the oil in a large non-stick skillet over medium heat until hot. (You might try a non-stick spray to eliminate the oil)
  3. Cook the fish in the oil for about 1-2 minutes per side.
  4. Remove and drain on paper towels.
  5. To assemble the tacos, top each tortilla with fish, cilantro sauce, avocado, tomato, red onion, and lettuce, then fold in half.

Makes 8 tacos. One taco per serving.
