Now, you might think that just because you have to adjust to a bariatric diet, that gastric bypass recipes are going to be bland and mushy. But gastric bypass recipes don’t have to be bland!

This Bariatric Recipe’s Ingredients
Barring allergies, all of this bariatric recipe’s ingredients are allowable in most diet plans. But always check with your physician about allowable foods.
- 1 tablespoon reduced-calorie margarine
- 1/2 cup onion, chopped
- 1 fresh tomato, diced
- 1 can (4 ounces) diced mild green chilies, drained
- 1/3 cup low fat or skim milk
- 2 oz. reduced-fat cheddar cheese, shredded
- 4 eggs
- 2 egg whites (you can use egg beaters)
- 1/4 tsp Sweet’N Low or Splenda
- 1/4 tsp garlic powder
- Chopped green onion & minced fresh parsley for garnish
Preparing This Gastric Bypass Diet Friendly Dish
1. In shallow 8 to 9 inch round microwave dish, sautee onions and margarine covered on high for 2 minutes. Add in chilies & tomato; cook uncovered for 1 minute.
2. In medium bowl, beat eggs, egg whites, milk, garlic powder and Splenda or Sweet’N Low together; pour over vegetables. Cook uncovered for 4 to 5 minutes, stirring frequently to Keep mixture from outside of dish and toward the center.
3. Just before the eggs are firm, sprinkle the cheese on top. Do not overcook, as it will continue to cook after you remove it from the microwave.
4. Sprinkle on green onion and parsley. Serve immediately.
