Bariatric Recipe: Apple and Carrot Slaw

Apple Baritric DietSummer will officially arrive on Monday. There’s nothing better than a fresh and cold salad to add to your summer menus. This tasty salad will get your summer started with a bang.

  • 2 large apples (red, green, or one of each) cut into slices or cubes
  • 2 Tbsp fresh lemon juice
  • 2 Cups carrots grated
  • 1 cup shredded cabbage
  • 1 Tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp freshly grated black pepper
  • 2 oz low fat feta cheese (can substitute other low fat cheese)

Place the apples in a bowl, add the lemon juice and toss together. Add the carrots, cabbage, olive oil, sugar, pepper and cheese.

Serves 6 as a side dish.

Celebrate the arrival of summer with new bariatric recipes and dishes and some planned activities. Swimming is one of the best exercises. Pools are open now so dive in and do some swimming. Look for aquatics classes too – you’ll be surprised the work out you will get. It’s easy on your joints too!

Even though you are eating healthy and trying new recipes you still need to take your bariatric vitamins and supplements. Be sure to be taking ones with no fillers or additives. Since it is more difficult for you to absorb nutrients you want to make sure there are no “extra” ingredients. If there is anything listed in the ingredients besides the vitamins and supplements it is not the product for you.

Bariatric Diet: How to Satisfy Yourself and a Finicky Family

After weight loss surgery you have probably learned what foods are best for you and most tolerated by your modified digestive system. But is your family on board with your new diet? Some bariatric patients find themselves making two meals: one that is suitable for a bariatric diet and one that the rest of the family will eat.

Low Calorie Pizza for the Whole Family

Since you are eating healthier now there is no reason that your family can’t too – and enjoy their meals. Pizza may have been a dietary staple for your family. It’s a favorite with most kids. You can still have pizza but in a more healthy (and delicious) way.

Homemade pizza is not as difficult as you might think. It’s a great way to have the whole family participate in meal preparation and choices. Individual pizzas can be made quite easily and make everyone feel special with their own pizza.

Use a low-fat, whole wheat pita bread for the base. Add a little bit of seasoned tomato sauce and then stack on the vegetables. Sliced turkey sausage makes a great addition too. Top it off with low-fat, part-skim mozzarella cheese and you have a pizza fit for a king. Keep in mind that this meal should be a treat, and not a staple.

Salads can be Fun

If your finicky eaters usually turn their noses up at salads let them pick some of the ingredients and help prepare them. Some fun ingredients are sunflower seeds, craisins, strawberries, raspberries, and mandarin oranges. They help make a colorful and appetizing salad.

Who Doesn’t Like Shakes?

If your brood loves milk shakes and frozen smoothie drinks, you can all have this tasty blender drink with healthy ingredients. Try making a shake with low-fat yogurt, strawberries, frozen bananas, or pineapple. Throw in a little vanilla or almond extract to liven up the flavors.  Let the kids pick their favorites and flip the switch on the blender.

Including the Family in Meals Makes a Difference

It’s a great way to bring the family together by letting them participate in the food choices. Everyone usually has a favorite. A good way to keep them all happy is to let them each have a day of the week where they get to have their favorite food included somewhere in the menu. Everyone will soon realize eating can be enjoyable and healthy.

Getting the proper vitamins into your family does not have to be difficult. Although you will need to always take your bariatric vitamins, eating healthy and setting an example will benefit your whole family.  You’ll feel better knowing your family will be in good physical shape too.

Bariatric Recipes: Marinated and Grilled Vegetable Salad

Summer is almost here. Are you ready to fire up the grill and enjoy a great vegetable salad? This bariatric recipe is sure to please everyone. The marinade makes all the difference and provides a vegetablestasty side dish or a great lunch.

Fresh vegetables and fresh lemon juice will make this not only good but good for you. Be sure to let the veggies sit in the marinade for 30 minutes or so. It’s a delicious way to get needed bariatric vitamins while enjoying your meal.

  • 1 medium red onion
  • 1 sweet red bell pepper, sliced in one inch strips
  • 1 pound asparagus
  • 2 medium sized zucchini, slice in half lengthwise then cut into 2 inch pieces
  • One ear of corn sliced in one inch pieces
  • 1/3 cup lemon juice
  • 1 tbsp olive oil
  • 2 tablespoons minced garlic
  • 1 tbsp honey
  • ¼ tsp chili powder
  • 1 tsp hot sauce

Break asparagus ends off. Place onion, bell pepper, asparagus and zucchini in a large plastic container or zippered plastic bag.

Combine the lemon juice, olive oil, garlic, honey, chili powder, and hot sauce and pour over the vegetables. Seal the container and gently shake to coat thoroughly. Let stand and marinate for at least 30 minutes. Shake the container about half way through.

Fire up the grill till the coals are medium heat. Remove the vegetables from the marinade and place the vegetables in a large grill basket. Grill them with the barbecue lid off for about 20 minutes or until they begin to char. You will need to turn them often.

Makes 4 servings.

Note: I’ve tried this with fresh pineapple chunks added – yummy! You can also probably stretch this one to make six servings.
