  • 2 large sweet potatoes (peeled, and sliced into strips like French fries). Rinse and dry after peeling.
  • 1 tablespoon parsley (finely chopped)
  • 1 tablespoon rosemary (finely chopped)
  • 1 tablespoon tarragon (finely chopped)
  • 1/4 teaspoon ground cumin
  • Optional ¼ teaspoon of curry
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • freshly ground pepper, to taste
  • salt, if desired, to taste

How to Prepare:

  1. Preheat the oven to 350 degrees
  2. Prepare a non-stick baking sheet with non-stick spray
  3. Toss all the ingredients together coating the sweet potatoes with the herbs and spices
  4. Place the potato mixture on the baking sheet
  5. Bake for around 20 to 25 minutes. They should be crispy and gold.

Makes enough for 4 servings.
